What started as a personal endeavor quickly became one of Copenhagen's best spots for laid-back gatherings. Pernille Rosenbæk and Henry Stevens opened Auren's Deli in 2022 in Frederiksberg, Copenhagen. It is a neighborhood grocery shop, delicatessen, and bar. Everything it serves is made with well-chosen ingredients and high-quality produce from mainly local farms.

"With the shop part of the space, we wanted to give our guests access to fresh produce, a curated cheese selection, and goods for a well-stocked pantry & wine," says Pernille. As we were shown around the restaurant, the end wall filled with vinyl, books, and preserves caught our attention. It's easy to sense the incredible attention to detail with the wine, the food, and the service. Although they haven't opened yet, many locals stop in for a quick chat, fostering a genuine sense of belonging as we pass by.

"We carefully select everything based on how it is farmed and produced, locality, seasonality, and overall production practices. The shop is the backbone of the deli and provides the inspiration for the ever-changing menu", adds Henry, Putting on yet another vinyl. "The aim is to create synergy between the shop and what we serve in the deli, hoping to show guests how to engage and get the most out of both. From day one, we hoped to become a neighborhood spot, with regulars and locals using us for their morning coffee on the way to work and a place to enjoy a glass of wine with friends at the end of a long work day." 

While we were there, we were served three of their favorite dishes: a dressed salad featuring roasted pumpkin and the season's first bitter greens—a perfect reflection of what their vegetable shop offered at the time. Next came Oeuf Mayo, a timeless bar snack and a deli favorite, especially paired with a dry martini. To round it off, they opened a bottle from their preferred winemaker, Emilie Mutumbo, based in Tarragona, whose wines are among the most profound, elegant, and delicious we've ever tasted.
